Lima beans are legumes grown for their seeds and usually eaten in vegetable form. The scientific name of lima beans is 'Phaseolus lunatus'. Other names for lima beans include "butter" beans, "haba" beans, "pallar" beans, "burma" beans, "guffin" beans, and "hibbert" beans. These beans are highly nutritious and usually come in two sizes. It is believed that the larger of the two sizes was first planted in the Andes, while the smaller was planted in Mesoamerica around AD 800. Lima beans have a delicate flavor that makes them perfect for use in a variety of dishes.

 

Types of Lima Beans:

  • Bush Lima Bean: The Bush Lima Bean has large seeds and a high yield. They produce small, flat, edible seeds. Seeds should be sown after the last frost date. Care should be taken to ensure that the seeds are not soaked in water for too long as this will not help them germinate. Bush lima beans are otherwise very easy to grow, producing buttery beans that turn ivory white when fully dried.
  • Pod Lima: Pods of Pole Lima are 4 1/2 inches thick and have a high yield. However, they require a longer growing season than bush lima beans. They also need the support of a fence or teepee to grow. Pole bean seeds should be planted at least 6 inches apart, with rows at least 36 inches apart. Pole beans have a stronger flavor than bush beans, and they mature throughout the growing season.
